Peppermint Chex Mix

This Chex Mix is so yummy.  I don't know what it is, but I find myself making variations of Chex Mixes all the time, maybe too much!  The kiddos love them, my hubby does, and there's no end to the variety and creativity you can add to them.  Here's the recipe!

Peppermint Chex Mix
1 box of Rice Chex
1 bag of Candy Cane candy melts by Wilton
1 bag of white chocolate chips
4-5 cups of pretzels
1 bag of mini marshmallows (I didn't add these the first time, but thought they would be a yummy addition, and they were.  They are probably my favorite things about the recipe).
1 bag of white peppermint M&M's
1/2 cup of milk chocolate chips

In a large bowl  mix the Chex and pretzels together.  In a separate microwave-safe bowl, slowly warm the white chocolate and candy melts together in the microwave.  Make sure to temper the chocolate by warming it slowly and stirring every 30 seconds or so.  Chocolate doesn't hold heat evenly, so when you stir it after warming, you help evenly distribute the heat, rather than burning the chocolate and turning it to a clay like substance.  Tempering chocolate helps it keep it's glossy shine too.
After your white chocolate mixture is melted, pour and gently stir over the entire mixture.  Once its spread throughout the pretzels and Chex, add in the M&M's and the marshmallows, and stir all together.  
Finish by spreading the mixture flat on a cookie sheet with parchment paper underneath for easy clean-up.  Once it's spread out, warm your milk chocolate, and pour into a sandwich bag and cut a fine hole in the corner.  Gently drizzle the milk chocolate to preference over the whole mixture and......ENJOY!
